Ingredients:

Arugula greens

1 red pepper, cut into bite-sized pieces

1/2 red onion, cut into bite-sized pieces

2 Roma tomatoes, cut into bite-sized pieces

1 medium cucumber, cut into bite-sized pieces

1 can of garbanzo beans (use more or less to taste)

Juice of half a fresh lemon

A handful of fresh parsley, chopped fine

A handful of fresh basil or other fresh herbs, chopped fine

2-4 tablespoons Primal Greek dressing, or mix your own with extra virgin olive oil, balsamic or wine vinegar, herbs, and a pinch of sugar

Pecorino, Parmigiana, or feta cheese, crumbled or shaved

Sea salt and pepper to taste
Directions:

Chop all the veggies and herbs (except the arugula).

In a large bowl, combine the veggies, garbanzos, lemon juice, and dressing.

Arrange the arugula on a plate, then spoon the veggie mix over the top.

Finish with the cheese and season with salt and pepper to taste.
